Zucchini Curry





Ingredients:
2 Zucchinis peeled and diced
A pinch of Cumin, Salt, and Black Ground Pepper
2 Tbsp of Corn Oil
1 Tbsp of Butter
½ a Tomato

Method:
Place all ingredients in a pan and cook on medium, without Salt, Corn Oil and Butter. When ingredients start becoming soft add the salt, butter and oil. Continue cooking for another 5 minutes on medium. Once cooked, garnish some Cilantro and Black Pepper.

Serve with Rice or Naan

Serving size: 3 people

Green Bean & Potato Curry




Ingredients:

½ Lb Green Beans chopped in halves
1 Potato
1 Onion
½ a Tomato
Pinch of ground Red Chilies
¼ Tsp ground Turmeric
½ Tsp ground Coriander
½ Tsp Cumin
3 Tbsp Corn Oil

Method:

Sauté the Onion with Cumin until golden brown and add the rest of the ingredients and cook for 25 minutes on medium/low heat. Put in a dish at the end of cooking when oil appears and potatoes are fully cooked. Garnish with freshly chopped Coriander (Optional).

Serves size: 3 people

Ginger Lemon with Basil Drink!

My Aunt came over today and made a cool looking drink, the green colour might be what caught my attention however the extended health benefits are what we really should be looking at :)

Ingredients:

3 inches of fresh ginger
Lemon juice 1 cup
2 cups sugar

Instructions:

Boil 2 cups of sugar in 4 cups of water till total of 2 cups remain, then set aside. Blend the 3 inches of fresh ginger in 1 cup of water, now add the blended ginger and lemon juice tot he 2 cups of sugar syrup. Boil for 1-2 minutes and then let it cool. Strain the juice and bottle it.... reserve the ginger as it can be mixed with yogurt as a salad dressing.

Serving:

In blender add water, ice and add 5 to 6 leaves of fresh Basil. Blend 2 to 3 minutes and enjoy.

My Ramadan favorite: Fruit Chaat

A fruit salad essentially drenched in fruit juices and spices.

Ingredients:

Fruits

blueberries , strawberries, banana

Juices:

Orange juice, a bit of lemon juice

Spices:

Cayenne pepper, pinch of salt.

Mix it all while determining the quantity of fruits and spices by your self. Add a bit of sugar based on your sweet tooth.
